In an attempt to spend less since we are going to England next year, I am cooking more often.
The mild chili with apples was great. Leon added Chipotle Tabasco to his and though I loved it as it was, I followed suit the next day, yum.
Today I realized I didn’t have black beans for today’s concoction. OOPS. Though Leon felt horrible and was coming home early, he stopped at the grocery on the way home to get them, but just grabbed — beans with spices, and black bean soup. I needed plain. Worse yet, they had Monosodium Glutinate – and I won’t eat that knowingly.
I couldn’t let him starve, right? And I couldn’t ask him to take me to dinner. (Well, I could, but I chose not to.) So, I cooked what I had, after we had tea and Challah bread with raisins.
I threw mustard and Chipotle Tabasco sauce in small can of Busch’s Vegetarian Baked Beans, let them simmer; Sliced a baking potato and arranged it neatly around a large plate, tossed frozen red and yellow peppers and onions in the middle along with chopped garlic. (LOTS). Of course, I had to sprinkle something on it: a bit of salt, a bit of celery seed, and tons of pepper. Oops.
In a hurry, I used the microwave, hit the button repeatedly a few minutes at a time until it was cooked. Finally. For me, that was a lot of time in and out of the kitchen.
Leon added sliced turkey and cheddar cheese.
His feeling crummy saved me his critiques, grin, ’cause he is watching a violent movie, Wanted, on his laptop, with headphones, while eating. He is so engrossed in that, he has not noticed the fire in the potatoes! Wish my program was as engrossing, ’cause my mouth is burning, but yum!
Sure hope he feels better soon, so we can go to Chipotle!




Marcia, It was good to see your comment on my blog. The soup sounds wonderful, much like the food i fix here in Tucson. I might add that I would eat a lot less to save to go to England…love to travel! Stay well.

I could sooooo go for a burrito for lunch today, but won’t. It’s too cold out to take the dog for a walk, and I’d need about 14 walks to walk that off!

I’m impressed by how creative you are. I like to follow recipes. It seems every time I get “creative,” it doesn’t turn out well. So I just follow someone else’s ideas.
